Peanut Butter Granola

What’s up! Welcome to Little Things and Sunshine. I have been in such a granola mood recently. I mean granola cereal, granola on my yogurt, granola by itself, you get the picture. There’s granola everywhere. Homemade granola is one of my favorite things to make and it is so simple. With basic ingredients and maybe a few new ones (I like to be adventurous sometimes;) you can create a healthy and delicious snack that also adds nutrition to any meal. My most recent project was a peanut butter granola. This particular one is great because it is packed with protein and amazing flavor.

To start, mix 1 cup of old-fashioned oats, 1 tbs. of hemp hearts, 2 tbs. of raisins, 1 tsp. of peanut butter powder, 1/4 of a cup of dry roasted peanuts, and 1 scoop of vanilla protein powder in a large mixing bowl. Set this aside to work on your wet ingredients.

For your wet ingredients, add 3 tbs. of all-natural creamy peanut butter, 1 tbs. of honey, and 1 tbs. of rice syrup to a small, microwave safe bowl.

Microwave the ingredients for 30 seconds. It should look like this grossness lol.

Pour your wet ingredients into your dry mix and mix together. Then add a splash of milk and 1 tsp. of melted coconut oil into the mixture. All together, it should be damp but not super wet.

Line a baking sheet with parchment paper and spray with coconut oil. Pour your mixture onto the baking sheet and put in the oven at 350.

Bake until it has browned and dried.

When it is just barely warm, drizzle 1 tbs. of honey of the top and mix together.

Simply store your granola in an airtight container (I put mine in the fridge) and enjoy! Make sure to experiment with some of your favorite ingredients and make this granola your own.
